 +Saving plots is easy under Mac and Windows, where the graphics panel has corresponding options, but not under Unix.  Under Unix you can use R Commander, and if you select a data set in the GUI, the "Graph" dropdown menue will allow you to save the file.  For the workshop screenshots are fine but keep in mind that for "production" plots, vector graphs, such as pdf is preferable.
